Recipe idea: the millet pancake:


1kg of millet flour or 750g of millet flour and 250g of plantain flour
100g of sugar
1L of water
Cooking oil


Sift your flour
Boil the water, and when it is boiling, add 200g of millet flour, first diluted in a little water
Stir until thickened
Incorporate this porridge into the rest of the flour and the sugar, adding water if necessary: ​​be careful, the mixture must be pasty but not liquid
Leave to rest for 3 hours (but not more)
Once the dough has risen, do not stir, and fry for about 3-5 minutes on each side, either in a deep fryer or in a hot pan with oil
